Strawberry Spinach Salad

One of my favorite “go to” lunches is a strawberry spinach salad. ┬áPacked full of vitamins and nutrients this salad is easy to make and quite flavorful.

Ingredients
organic spinach
organic strawberries (cut and rinsed)
organic braeburn apple (peeled, cored, diced)
organic goat cheese (crumbled)
balsamic dressing (I used Tessemae’s All Natural: olive oil,lemons,garlic,mustard,balsamic vinegar,sea salt)

Directions
Mix ingredients together and enjoy

  1. Wouldn’t it be more healthy not to peel the apple? I don’t peel apples any more; I know there are lots of nutrients in the skin as well as the addition of the lovely color.

    • Deb- I agree with you that the apple skin does hold a great deal of nutrients. The reason I peel is a preference of taste and texture. I’ll adjust the recipe to state *optional for peeling. Thanks for the feedback!
